For most of us, this Thanksgiving is probably going to be very different than in years past. Less travel, smaller gatherings, a slower pace, and maybe a little simpler. And while it may be different, that doesn’t mean it still can’t be enjoyable. After all, a slower pace is probably what most of us need anyway. So, why not get back to basics with your Thanksgiving dinner as well? 1. Never too Stuffed for Stuffing
Ingredients:
2 baguettes, country, or sourdough bread (1 pound)
8 tbsp. butter, plus more for baking dish
1 large onion, diced (about 2 1/4 cups)
4 stalks celery, thinly sliced
2 cloves garlic, minced
1/2 c. freshly chopped parsley
1 tbsp. freshly chopped sage, minced
1 tbsp. fresh thyme leaves, minced
1/2 tbsp. freshly chopped rosemary
Kosher salt
Freshly ground black pepper
4 c. low-sodium chicken (or vegetable) broth
2 large eggs, beaten
2. Smashing Mashed Potatoes
Ingredients:
3 lb. potatoes (about 4 large, combo of russets and Yukon Golds)
Kosher salt
1 stick butter, plus 2 tablespoons for garnish
1/2 c. milk
1/2 c. sour cream
Freshly ground black pepper
3. Yummy Cornbread
Ingredients:
1 1/2 c. yellow cornmeal
3/4 c. all-purpose flour
1/4 c. light brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. kosher salt
1 c. whole milk
1/2 c. buttermilk
2 large eggs
3 tbsp. butter, melted and cooled slightly
4. Green Bean Casserole – Yes, Please!
Ingredients:
2 (14.5 ounce) cans green beans, drained
1 (10.75 ounces) can condensed cream of mushroom soup
1 (6 ounces) can French fried onions
1 cup shredded Cheddar cheese
5. Butter Them Up with Soup! Butternut Squash Soup
Ingredients:
2 pounds butternut squash, cubed
2 onions, chopped
1 tablespoon butter
4 cups vegetable broth
½ cup heavy cream
salt and pepper to taste
1 dash ground nutmeg
1 dash ground cloves
1 dash ground cinnamon
